Fancy a slice of cake on World Baking Day this Sunday

It's World Baking Day on Sunday so I thought I would share with you a favourite cake recipe that I have been baking and eating since childhood.

This recipe makes 2 decent sized cakes - perfect for sharing.

Ingredients

  • 400g Apples- weight when peeled, cored and roughly chopped
  • 350g sultanas
  • 180ml milk
  • 570g Self raising flour
  • 255g soft brown sugar
  • 255g butter melted
  • 2 eggs
  • 3 level teaspoons of mixed spice

plus 25g of Demerara sugar for the top

Method

  • Preheat your oven to 170 deg C / 325 deg F / GM3
  • Grease and line 2 x cake tins (7 inch is good- and you can use square/round tins both work well with this recipe)
  • Combine the dry ingredients (reserving the Demerara sugar you'll use this later)
  • Stir in the melted butter
  • Finally stir in the milk and beaten eggs
  • Divide the mixture between the 2 tins
  • lay a loose leaf of parchment paper over the top to prevent burning
  • Bake in the centre of the oven for 1 hr & 30 mins
  • After 1 hr 15 mins remove the parchment paper and sprinkle the reserved Demerara sugar over the top and return to the oven for the last 15 minutes
  • Leave to cool a little before removing from the tin and slicing

This cake keeps very well in a cake tin or tupperware - but beware its so deliciously moorish if it is in sight it will be being nibbled at by all takers.
